Spray a skillet with coconut oil spray and heat over medium-high temperature. Add the veggies and cook until soft (or onions are translucent), about 3 minutes. Add the eggs or egg whites and cook into a scramble.
Add the breakfast meat and scramble together. Finally, add cheese and cook until melted and mixed. For best results, allow to cool about 5 minutes before assembling or you'll get a soggy burrito.
Place the tortillas on a square of aluminum foil. Spoon the egg mixture in the center of each tortilla, leaving room on the bottom, top, and sides to allow for rolling.
Roll up each tortilla, folding in the sides of the tortilla as you go. See the video before you try it for the first time! Roll each burrito into the aluminum foil (or plastic wrap), write the date on it, and throw it in the freezer! Leftover breakfast burritos will be good in the freezer for up to 3 months if wrapped or in an airtight container.
To heat from frozen: Take the burrito out of the freezer and unwrap it from the aluminum foil. Put in the Air Fryer basket at 300 degrees f (medium heat, depending on your air fryer model) for about 12-15 minutes, turning over halfway through. You can also use a toaster oven for about 12-15 minutes at 350 degrees or a microwave, which will take about 2 minutes!
Burritos should be golden brown and have an internal temperature of at least 200. Cutting the burrito in half before heating helps ensure it is hot all the way through.
